MacOS Big Sur 11.2  
Mp3tag 1.0.0-beta.8 (30)

As soon as I enter / (forward slash) in Convert \> filename to tag, it crashes mp3tag.

Me too (Catalina 10.15.7). Try your formatstring without starting with /
