Can't seem to find the Explicit option. I'd like to tag songs in apple music as explicit or not but can't

Sometimes a reset of the field list helps - use the function in the menu of the right-arrow-button in the dialogue.  
If you are still missing the field name: simply type it in. Like that you can also handle user-defined fields which are usually not included in the list.
