I am able to do some renaming with exiftool and bash if the files contain metadata, however, many do not.

You can also use Mp3tag here, see Convert → Tag - Filename and Rename Files based on Tags for more.

And glad you have the 1.mp3, 2.mp3, 3.mp3, ... files as a kind of backup!
