I would like a custom action to Backup my fields to other fields in one swoop
I would like the $if statements added later

I wan to backup all tags before I play with them with the ability to get them back

I tried the guess, but it doesn't work, it actually works on some but crashes with the list show in file attachment.

Use a different type of action to copy the contents of one field to another. Use "Format value"
e.g. for HPATH:
Format string: %_path%

"Guess value" distributes to contents of one source field to other target fields and removes the information from the source field. You wouldn't want that for a backup.
