Delete all fields (method to leave only cover)

Version is v3.22b
The main extensions are mp3.flac.mp4.mkv
I want to remove all information except the cover (thumbnail).
So far I've been adding the tag panel manually, but sometimes there are tags missing.
And it is difficult for me to identify those tags.
I just found out about the "delete all fields" feature and was impressed when I tried it!
I thought it would be ideal if I could exclude only the cover from it, so I asked the question.
The total number of files exceeds 10,000, so I would like to avoid having to temporarily save the cover and then re-register it.
I am not adamant about the ability to delete all fields.
So any other method would be fine.
My concern is that I work with Japanese, so even if I follow your advice, it may not work because of the character encoding.
I have had other software fail because the path contained Japanese characters.
Fortunately I have been using mptag for 3 years and have never had a problem.
If anyone has any ideas on how to do this, please help.
