I have a FOLDER of ~200 or more MP3 songs ripped from my CD’s. Each song has the album cover of the CD it was ripped from. In the MP3Tag app. I batch changed the album name to “My Favorites” so that when transferring the folder/album to my iPhone it showed in the music app as one album containing the 200+ songs. But the album cover of the album (My Favorites) in the music app seems to be a random cover of one of the songs. I would like to have the “My Favorites” album have a unique cover of my design. Is this possible? I’m pretty sure that I can’t change it in the apple music app. (I can’t find out how) but was hoping to do it in MP3Tag if possible. Or at least find out how the random album cover that was used is determined. I would sacrifice that song cover for my designed cover representing the album on the music app. if I have to. I hope this makes sense what I’m asking. Thanks.
Do the files have different embedded pictures?
You could try if adding your designed cover as "front cover" is picked up by the player.
If I understand you correctly, yes it's possible. I've done this myself. First, ignore what it's showing, and don't worry about why it picked what to show. We're going to wipe that out.
Start by getting an image ready to be your new cover. Make sure you know where it's saved on your computer (and the name).
Load all the tracks into Mp3tag. Select ALL, and the cover shown in the left side Tag Panel should say "Cover varies". Right click, and select "Remove cover". Then right click again, and select "Add cover".
Save, and that should be the new cover for every one of your Favorites.

I want to retain the individual different covers for all the mp3 songs but would like (if possible) to have the folder/album that contains them to have my designed cover showing in the music app. Right now after transferring the folder containing the mp3s it shows in the music app as one album containing all the mp3s each with their own cover as I want. But the album/folder itself uses one of the songs (random pick??) covers to show.
I doubt that a player really relies on folders to group an album together but on the data in the field ALBUM.
This means that there is no object to which the extra picture could be attached.
So unless you add the preferred picture to all files (and keep the individual picture) and the player then also picks that picture as album picture, you will be stuck - or you have to replace the existing individual pictures with the new album picture.
I'm confused. You want to retain the original album art, but display another image when they play? Why?
I think I need more detail on what you're trying to achieve. Do you have these tracks in two places? Are they in the original album folder, and the new "Favorites" folder?
Sure, many do. I only use players that rely on folders. I prefer to pick a folder to play, not an album to play. While they are usually the same, sometimes it's not.
This may be difficult to achieve. Especially on the iOS platform where there are very few music player apps that have any kind of flexibility outside of what the Apple Music app does as a baseline. This is definitely outside of the norm for music buffs.
You could try the app BTR AMP. You can leave the embedded artwork for each song intact. Within the app itself you can assign artwork to the different library lists separately. I haven't tried this for an album though, as that is typically pulled from the files themselves. Worth a shot I suppose.
Following up on this. The default Music app on iPhone does not allow you to select an album cover that is different than what is already embedded. But I can confirm the BTR AMP does work. I have done this locally. The album list art can be overridden to what you choose, and yet when the songs are actually played they revert back to the embedded artwork.
