Next: How can I remove specific JPGs if I saved multiple pics to my tag by mistake?

also --- is there a way to add the multiple JPGs and have then "scroll" through multiple images while the MP3 is playing?

You have already found that mp3tag can add multiple images to your audio files. This is true for almost all types - mp3, FLAC, m4a, etc. The player will determine if more than one image can be displayed and how it rotates through them. Refer to the documentation for your preferred player to see if it supports this.
