When I change the aspect ratio on one particular album, and then I change the aspect ratio once again to another album, I go back to the first album and the original aspect ratio I saved it at, changes to the more recent aspect ratio. It will not save for each album (folder) at what I want it to be at.
I hope I'm making sense here. Is this a bug?

Just to get the idea clear: you have pictures for which you want them to be seen in a ratio that is in the original picture and some pictures for which you want the picture be expanded or shrunk so that it fits the square?
And what does your player make of it?
Just a hint: there is no attribute in the tags that would store this information. So the display would vary from program to program.
Even if you start to save a CORRECT_ASPECT_RATIO field for each track, there is no software or player out there, that will recognize this field and apply it.

No, it would not make a difference as such an attribute is not included in the standard.
You would have to adapt the pictures with a suitable picture editor so that they look right when dispayed with the original aspect ratio.
As MP3tag does not keep a list of files and their attributes that it has loaded before there is nowhere to save but in the files.
And as you ask so many why questions, I ask some, too: Why is it important to see some pictures in a distorted way in MP3tag and others not? Why is it only important to have this function in MP3tag and not also in real players and audio collection management programs?
The best way would still be to embed only pictures that display correctly when the aspect ration is (always) kept.
Why? Because it's the one I see the most that has this problem.
For the most part, I find Music Bee actually has little problem showing non-square covers and corrects it automatically. It's only when I see them in mp3tag that that I constantly have to right-click the picture and change the aspect ratio.
I have to constantly go back and forth when I add album art to new folders tagging since the previous setting carries over when I don't want it to.
I thought somehow this kind of a setting display would embed itself in the individual tagging, but I guess that sounds impossible now.
I'm not sure I understand what you are trying to do in mp3tag. If images are already square they show up and fill the space in the tag panel. If they are not a square aspect ratio, the image fills the maximum height or width and leaves black space where necessary. But the images appear in the correct aspect ratio always.
What kind of images are you using that are causing this distorted stretching?
I think you are misunderstanding this setting of Mp3tag. If you check this Mp3tag will show the correct aspect ratio for all files, which in some cases may not be square. If you leave it unticked Mp3tag will always show all pictures square and therefore some pictures not in the correct aspect ratio.
