Is it possible to set track order of a group of MP3s based on their creation date? For example, track #1 as the MP3 with the oldest creation date of the group, and track #2 as the MP3 with the second oldest creation date, and so on.

You can add a new column to the File List via Preferences → File List that displays the creation date using %_file_create_datetime% as value and %_file_create_datetime_raw% as sort criteria.
Clicking on the header of this new column in the File List sorts the files accordingly (alternatively: View → Sort by → Created).
After that, you can use Convert → Assign Track Numbers... to sequentially assign track numbers in one go.
