You want to replace the
GREEK SMALL LETTER OMICRON WITH TONOS
with
LATIN SMALL LETTER O
and
GREEK SMALL LETTER IOTA WITH TONOS
with
LATIN SMALL LETTER I
and
GREEK SMALL LETTER IOTA
with
GREEK SMALL LETTER OMEGA
and
GREEK SMALL LETTER OMEGA
with
GREEK SMALL LETTER IOTA
I don't speek Greek. Can you not just replace the "current word" with the "new word"?
For example:

with
Νικηφoρος

your example was correct!
As I don't know if you can replace a single character and still get a valid Greek word, I'm not sure if this works:
You can try to use the Format string:
$replace(%TITLE%,ό,o)
Test your Format string with Convert Tag -> Tag first:

Then you could use an Action too.
But you would have to write several actions for all your characters you want to replace.
Or you can use several replacement pairs like this:
$replace(%TITLE%,ό,o,ί,i)

Are you sure that you want to change the tag TITLE or are your speaking about the filename?
Could you describe or show us, preferably with a screenshot, what you did? Because, as @LyricsLover showed in his post: it worked for him.
I think i might have to change both because TRAKTOR won't find the file but first i will try to change just the title. The only problem with TRAKTOR is that doesen't read extra sympols so my life is getting harder while i'm searching on my lists.
I'm following the steps and it seems that in the preview i have te result i want but when i press ok nothing changes.
Nothing changes where, in mp3tag or in another application? It appears in your example it does in fact show the correct results.
As you can see, the replacement for your "w"-character works fine for the TITLE
TITLE and %TITLE% in the Format string with _FILENAME and %_FILENAME%
TRAKTOR is known not to recognize any change made outside of TRAKTOR. There is not much you can do then ask Native Instruments about this. See Fakt #4.
Thank you very much buddy, problem solved, you are right about TRAKTOR unfortunately but it seems that the results are only visible when i'm adding the track to TRAKTOR, otherwise you can't see any change in the title.

Looks like there is some progress with syncing changes outside of Traktor, but only for a few fields.

That right-click iTunes node context-menu "Song Sync Info" only applies for an initially imported iTunes library - not for other individual tracks - right?
I don't use Traktor so I cannot confirm if this also applies to metadata from other sources. But since they use the same tag field I would have to think this should work. At least it appears there is some effort to improve this area of the software.
