When the field size is big and entering the cell to edit mode - UI shows the end of cell with focus left on end of cell's string. No arrows working. When trying to slide - it's focus left so no edit available.
I'm not sure if I understand you.
If I click on a field where the content is "too big" to be displayed completely, I can press the Arrow-left ← or Arrow-right → on my keyboard and jump to the start of the content or the end of the content:

In the Tag panel it looks like this:
I can click everywhere I want in the content.
Then I can click the Home or End keyboard keys and jump to the start or the end of the content.
If I use CTRL + Arrow-left ← or Arrow-right → I can jump word by word to the left or to the right.
Depending on the column definition you many have columns that only show data - but do not allow to edit it.
Please note that special properties, starting with a name starting with an underscore, cannot be edited in the file list, regardless of column definition.
Let's say I have normal window with large 'title' cell and short text in it. Then fast click goes into edit mode. Now you see the end of cell with invisible cursor because text is in the beginning of cell.
This issue can be reproduced if the width of the column is greater than that of the current Mp3tag File List window:
The issue can easily be resolved by reducing the width of the column so that it is fully visible in the current Mp3tag window.
That's workaround. Should I always make fields shorten? - No.
But you could use the horizontal scroll bar.

Don't be. It's the first time I've got bumped into case in so many years 
I can reproduce it now.
Another possible workaround for now would be to use Tab and then Shift+Tab to move the view to the beginning of the large column.
