Editing a folder of songs (i.e one album) and I will assign a genre to all the tracks. After saving I see the genre assigned to each track but it disappears within the track panel. All other fields maintain there correct assignment with variable fields showing as .
Why does the genre field disappear?
See the FAQs on the Genre field and see if there are settings that filter out any values
What do you mean exactly with "disappears"?
Does it change to < keep > or to < blank > or is it empty?
A screenshot from your Tag Panel would help us to identify the reason.
It is empty, but it acts as if it is 'blank'. If I save again the genre field is erased on the selected tracks.
Which of the settings as shown in the FAQ thread
have you checked and found that the problem is still there?

I have tried every combination of options in the Custom list values panel and the prolem persists. I can select a genre from the drop down, but as soon as I save it to the selected tracks it disappears. If I save again all the genre fields of the selected tracks are erased.
This only happens when MULTIPLE tracks are selected for update. The update works as should when only one track is selected for update
The default value should be <keep>
< keep > is also suggested in the documentation for edited Tag Panel fields:
