How can I export all the Mp3tag data into an Excel spreadsheet? The csv export option puts everything on one line and is not useful.

It is actually not the export option but the configuration of the target program.
Open the generated csv file from within Excel as data to be imported and define the correct field separator in the import assistant.
If that still does not work, edit the export script and replace all the ; with $char(9).
