It is not clear what you mean by not assigning tags. If you make the changes in mp3tag you can see the details in the columns. But what are you looking for in the folder? These are clearly saved to the correct locations in mp3tag. The mp3 file format is a standard that Windows should read but for many reasons may not be updating. Some are OS related, like indexing options. Again I wouldn't depend on Explorer to show these as it is often slow to update as you can see. …
